Ingredients:
* 4 Tilapia fillets 6 oz each
* 6 cups potato chips finely crushed.
* 2 cloves of garlic minced
* 1 tsp of fresh or dried dill
* 2 tbs chopped Italian flat leaf parsley
* 1/3 cup light mayonnaise
* 2 tsp spicy brown mustard
* Lemon wedges.
Method
1. Preheat oven to 425 degrees.
2. coat baking sheet with cooking spray.
3. Combine crushed chips with 1 tbs parsley and 1 tsp dill.
4. In a small bowl combine mayonnaise, mustard, garlic and remaining parsley.
5. Place Tilapia fillets on baking sheet and spread mayonnaise mixture on top of fillets and sprinkle the chip mixture on top of each fillet.
6. Pat lightly to adhere and pray each fillet with cooking spray.
7. Bake 10 to 12 minutes or until golden brown.
8. Garnish with lemon wedges and serve with oven roasted green beans on the side.
