Crock Pot Cajun Chili

A Variation on the Traditional Chili Recipe

1 large onion

1 large green pepper

5 stocks of celery

2 cloves garlic

2 lb ground beef

1 lb dry white beans

2 tbsp. Cajun seasoning

Salt and pepper to taste

Red pepper sauce to taste

Soak the beans overnight or place beans in a large pot and bring to a rapid boil. Reduce to a simmer and allow the beans to cook for 1 hour. Drain and rinse the beans. Cut up the onion, green pepper and celery. Sauté in olive oil until onions begin to become clear. Add the garlic. Sauté for another minute. Now add the ground beef. Sauté until brown. Add the beans, Cajun seasoning, salt, pepper and red pepper sauce. Cover with water. Simmer on low-medium heat until thick.

Optional:

Add three strips of when sautéing the ground beef for extra flavor.
