Ingredients:
2 pounds fresh chicken breasts, sliced lengthwise
1/2 Green pepper cut into slices lengthwise
1/2 Red pepper cut into slices lengthwise
1/2 Yellow pepper cut into slices lengthwise
1 large yellow onion cut into long strips
1 tbsp olive oil
1 tbsp vinegar
1 tbsp Worcestershire sauce
Juice from one whole lime
1 tbsp sugar
1 tsp chili power
1 tsp ground cumin
1 tsp crushed red pepper (more or less to taste)
1/2 tsp salt
1 tsp garlic powder
1 tsp onion powder
1/2 tsp black pepper
On the side:
1 Package flour tortillas-warmed
Salsa
Sour Cream
Guacamole (if desired)
You may add shredded cheese if desired--some people like cheese on their fajitas!
Add Thawed Chicken Strips, Onion and Pepper to Crockpot. Add liquid vinegar and oil, stir to coat.
Add remaining ingredients to crock pot, and stir.
Cook on high in large Crockpot 5 hours. Add additional time for low setting.
Warm flour tortillas, serve with salsa and sour cream and guacamole
Makes approx 6 fajitas

Cooking is a hobby of mine, and creating new things or variations of recipes that I already have, I tweak them, eliminate the ingredients I don't like, and add some that I do. I don't have a lot of time for it anymore, but with fall coming I got the crockpot out today and worked on this one. It was very tasty with just a bite (I used a little less of the crushed red pepper), and very filling.
