Crockpot Chicken: So Easy You'll Forget You Cooked It

These Crockpot chicken dishes are great. You can throw them together in the morning and forget about them until supper time. If you work or are planning on a busy day then, these recipes are just right. All of the recipes were passed on to me by friends. We all like to help each other find short cuts to make life just a little bit easier. Try just one or all three. I really hope they make your day a little easier.

Salsa Chicken

ingredients:

olive oil
2 lbs boneless skinless chicken breast
1 jar store bought salsa ( heat preference of your choice)

First, begin by drizzling the bottom of the Crockpot with a little olive oil (enough to coat the bottom), then add rinsed and cleaned chicken. Pour entire jar of salsa over chicken and cover. Cook on low for 8 hours. That's it. Wasn't that easy? We like to cut up the chicken and wrap it in warm tortillas as if you were making tacos. You can put out some shredded cheese, lettuce, tomato, onion, jalapenos, sour cream or anything you like. The other way we serve it is over rice with a cooked vegetable on the side. Enjoy

Chicken and Stuffing

Ingredients:

1 pkg stove top stuffing
4 to 6 pieces chicken breast
1 can chicken broth
1 onion
2 sticks of celery
salt and pepper

Cut onion into quarters and cut celery sticks in half and place in the bottom of the Crockpot. Pour package of stuffing over celery and onions. Now place the rinsed chicken over the stuffing and pour can of chicken broth over the whole thing. Season chicken with a little salt and pepper. Let cook on low for approximately 6-8 hours or until chicken is cooked thoroughly. Throw a bag of frozen vegetables in the microwave. You'll have a great home-cooked meal without all the fuss.

Roasted Chicken and Red Potatoes

Ingredients:

2-21/2 lbs chicken breast
8 baby red potatoes
1 large Vidalia onion
6 cloves of garlic
1 cup baby carrots
olive oil
salt
pepper
rosemary
thyme

Drizzle enough olive oil to cover bottom of Crockpot. Add the 6 cloves of garlic. Quarter the onion and put it in the pot along with the red potatoes. Next, add the potatoes. Drizzle a little more olive oil and season with salt and pepper. Now sprinkle 1 teaspoon each rosemary and time over the potatoes. Add the cleaned chicken breast and again coat lightly with olive oil and salt and pepper. Let cook 7-8 hours until chicken is cooked through and juices run clear. This is a great hot meal for a cold night. delicious.
