Crockpot Stuffing

If you are feeding a lot of people on Thanksgiving, you might want to try making your stuffing in a crockpot. Crockpot stuffing is so convenient because you can easily make as much stuffing as you need, it does not take up room on your stove top, it stays warm until you are ready to serve your dinner, and you can easily transport the stuffing if you are bringing it to someone's home.

You can make any stuffing in a crockpot. If you have a favorite recipe, just mix it all up in a big bowl then put it in the crockpot and cook on low for 6 to 8 hours. If you don't have a recipe for stuffing, you can use the recipe below.

Easy Crockpot Stuffing

1 cup butter or margarine
2 cups chopped onion
2 cups chopped celery
1/4 cup chopped fresh parsley
12 cups dry seasoned bread cubes
4 cups chicken (give or take)
2 beaten eggs

Melt the butter in a skillet. Add the chopped onion, celery and parsley and cook, stirring often, until the onions and celery just start to get tender, usually about 10 minutes.

Place the bread crumbs in a large mixing bowl. Pour the onion and celery mixture over the bread crumbs and toss. Add the beaten eggs and toss some more. Then add just enough chicken broth to moisten the bread crumbs. Transfer the stuffing to your crockpot and cook on high for about 1 hour, then cook on low for 6 to 8 hours. Check the stuffing every two hours and if it looks dry, you can add a bit more chicken broth, poured evenly over the top of the stuffing.

You are allowed to change the recipe to your liking. Don't be afraid to try different seasonings and different ingredients. Some things you might want to add are 1/2 cup of slivered almonds, 1/2 to 1 cup of cooked white rice or cooked wild rice, 1 cup cooked ground pork, 1 cup cooked sausage, cut into small pieces, 1/2 cup chopped raw apples, 1 can sliced mushrooms, or anything else you can dream up!

If you want to use homemade bread crumbs, simply dry your bread slices in the oven at 200 degrees for several hours or over night. Then break into cubes. Then add 1 teaspoon of each of the following seasonings per 12 cups of bread crumbs: poultry seasoning, sage, thyme, marjoram, salt, and pepper. If you want to make it super easy, just add 6 teaspoons of poultry seasonings and nothing else. To season your bread crumbs, just toss the bread crumbs and seasonings in a large mixing bowl then store in plastic bags until ready to use. You can store for several days. Do not refrigerate or they may get wet.
