Crunchy Apple Salad

An apple a day keeps the doctor away, so they say, this Crunchy Apple Salad is full of apples grapes, pineapple and pecans. It is a satisfying and refreshing side dish to just about any meal. Great for pot-lucks and family gatherings.

Ingredients need to make Crunchy Apple Salad:

1-20 ounce can unsweetened pineapple chunks
8 cups chopped tart apples
2 cups green grapes
1/4 cup butter or margarine
1/4 cup sugar
1 tablespoon lemon juice
2 tablespoons cornstarch
2 tablespoons cold water
1 cup mayonnaise
3/4 cups pecans, toasted and chopped

Directions for making Crunchy Apple Salad:
Step 1: Drain pineapple; reserving juice.
Step 2: In a sauce pan place pineapple juice.
Step 3: Add to pineapple juice butter, sugar and lemon juice.
Step 4: Bring to a boil.
Step 5: In a small bowl combine cold water and cornstarch.
Step 6: Add cornstarch mixture to sauce pan with pineapple mixture.
Step 7: Stir mixture constantly.
Step 8: Return to a full boil; cook and stir for 2 minutes.
Step 9: Chill hot pineapple mixture.
Step 10: Stir mayonnaise into chilled pineapple mixture.
Step11: In a large bowl combine pineapple, apples, grapes, and cooked pineapple mixture.
Step 12: Fold in pecans before serving.
Makes 14 servings.

Tips:
May add 2 teaspoon poppy seeds if desire.
Chill hot pineapple mixture completely before adding mayonnaise.
Best apples to use in salads: Cortland, Golden Delicious, Empire, Gala, Red Delicious, Fuji, Winesap, Criterion, Pink Lady

Warning:
Refrigerate after making.
