1 15 oz. can chicken broth
1 28 oz. can Las Palmas Verde Sauce
1 bag Mexican Cheese blend
1 pkg. flour tortillas
1 white onion, diced
Directions for Deb's Mexican Lasagna
1
Cook the chicken in the chicken broth until tender.2
Preheat the oven to 375ú.3
Layer the bottom of a 9x12 baking dish with a thin coating of the verde sauce.4
Place flour tortillas on top of sauce, tearing them to fit the entire bottom.5
Spoon chicken until you have a layer. Follow with the onion, verde sauce and cheese. Add enough of the verde sauce so that the layer will be juicy.6
Place tortillas on top of everything. Repeat the layering process until you reach the top of the dish.7
Cover with foil and bake for 30 minutes. The lasagna should be bubbling.Tip
For a spicier lasagna, add 1/4 tsp. of cumin to the chicken broth. Alternately, you can add a layer of jalapenos. For a more authentic Mexican dish, use goat cheese instead of the Mexican blend.Add your favorite beans to give the dish a thicker substance.
