Decadence for One

For those living alone out there it is a pain when you get a sweet tooth! Most of the recipes out there are for huge dishes and for one person or a couple they are neither frugal nor practical.

True--you can take the leftovers and give them away but how about avoiding the leftovers to begin with?

Here is a recipe for a simple chocolate cake for one. You can mix this up and microwave it in a moment. Add some whipped cream or ice cream and take this to a completely different level!

Things You Need:

Mixing bowl
Baking dish large enough to contain 2 cups of liquid
4 Tablespoons all-purpose flour
4 Tablespoons sugar (granulated white or brown)
2 Tablespoons cocoa
1 Teaspoon cold coffee (or a few sprinkles of instant coffee grounds)
3 Tablespoons milk
3 Tablespoons Mayonnaise (real mayo only, not salad dressing)
1 Teaspoon vanilla
8 chocolate chips (optional)
vegetable oil

Step One:
Place all of the dry items (flour, sugar, cocoa) into the mixing bowl and stir well.

Step Two:
Add vanilla and stir.

Step Three:
Add coffee and stir.

Step Four:
Add mayonnaise and mix well.

Step Five:
Add milk, stirring again.

Step Six:
Add chocolate chips and stir until just mixed.

Step Seven:
Grease the baking dish with the vegetable oil.

Step Eight:
Pour the mix into the baking dish.

Step Nine:
Microwave on high for 3-4 minutes.

Step Ten:
Allow to cool for a minute.

Step Eleven:
Top as desired (whipped cream, chocolate syrup, marshmallows).

Step Twelve:
Enjoy!

Tips:

If you do not have mayonnaise, use 3 tablespoons oil and one egg instead.

Instead of chocolate chips try adding some nuts or a different type of chips.

Try this with a dusting of powdered sugar, or serve with ice cream for a delicious twist.

  • Pour some chocolate, caramel or butterscotch syrup on the cake when it is finished.
  • Sprinkle some powdered sugar on top for another option.
  • Experiment with different chips like white chocolate or butterscotch in the cake.
I tried the chocolate mug cake. It wasn't rich enough. This is my response.

    Wow, nice recipe! I need a "small" recipe like this for one because I definitely do not need to eat a "whole" cake! :-)
