Delaware's Coconut Jumble Muffins
1 recipe Rich 'n' Sweet Muffins
¾ cup flaked coconut
¼ teaspoon nutmeg
2 tablespoons honey
2 teaspoons grated orange peel
1 teaspoon grated lemon peel
Prepare muffin recipe as directed except add coconut and nutmeg to dry ingredients.
Beat honey and citrus peels into butter/sugar mixture, then proceed as directed.
Bake 15 to 20 minutes.
Makes 1 dozen, about 235 calories each.

I agree, Kay. This one got me. What does Delaware produce? My husband's brother was stationed in Delaware in the 60's and when we visited them, I got respiratory allergies for the first time ever. According to his wife, who suffered horribly from allergies, if anyone was ever going to have allergies, they'd get them when they went to Delaware. Maybe I should have created "allergy muffins"?
Ok- I know there aren't any coconut farms in Delaware! LOL!
