Delectable Ice Cream Dessert Recipes

A couple of my most favorite recipes that incorporate ice cream that will surely become yours too.

Mocha Ice Cream Pie Recipe
A delightful dessert recipe that features one of my favorite ice cream flavors - mocha!

Ingredients:
• 2 individual 1 oz. chocolates squares
• 2 tablespoons butter
• 2 tablespoons hot milk
• 2/3 cup confectioners' sugar
• 1 1/2 cups coconut shreds
• 1 quart softened chocolate ice cream
• 2 teaspoons instant coffee that has been dissolved in a teaspoon of water
• 1/4 cup chopped pecans
• whipped topping
• pecan halves and shaved chocolate, for top garnish

Instructions:
Melt chocolate and butter together by blending together. Stir hot milk into the confectioners' sugar and add to chocolate mixture and stir to mix well. Stir in the coconut shreds. Press mixture into the bottom and up sides of a 9-inch buttered pie plate. Let it chill in refrigerator. Stir softened ice cream, dissolved coffee, and chopped pecans together. Spread in chilled pie shell, swirling top. Decorate with dollops of whipped topping, pecan halves, and shaved chocolate. Freeze the mocha ice cream pie until fully firm.

Frozen Butter Pecan Crunch Recipe
This is a versatile recipe that will be a great hit with kids and adults alike.

Ingredients:
• 2 cups of graham cracker crumbs
• 1/2 cup softened butter
• 2 package (3.4 ounces each) instant vanilla pudding mix
• 2 cups of milk
• 1 quart butter pecan ice cream, softened slightly (or you can use your favorite flavor)
• 8 ounces thawed whipped topping,
• 2 crushed Heath candy bars

Preparation:
Combine the graham cracker crumbs and melted butter. Press the graham cracker mixture into the bottom of an ungreased 9 X 13 inch baking pan. Chill the mixture thoroughly in the freezer. In a large mixing bowl, mix the pudding mixes and milk until well blended for about one minute. Fold in the softened ice cream and whipped topping and spoon the combination over the chilled crust. Garnish the mixture with crushed Heath bars and then put it in the freezer. Remove the pan from the freezer about 20 minutes before serving.
