Delicious 100 Calorie Chicken Salad Recipe (My Version of an Original from "The Creamery" a Gulf Breeze, Florida Restaurant)

I love chicken salad. I especially loved one I use to drive thirty miles to get. Once a year, I would travel to Gulf Breeze to indulge in a salad made at a shop known as 'The Creamery.' This year on my annual trek, I discovered the restaurant was closed. I could not believe a shop I visited once yearly for the last 30 years was now closed. Trying to find the owner relatives to get the recipe for the salad has been impossible. The original owner died. I have no idea what her name was. I also cannot find out from anyone who she was or where her family might be. So, I was stuck craving the salad and not knowing anything other than a few of the ingredients.

Since discovering the closure and the sad news surrounding it, I have wracked my brain trying to figure out how she obtained the unique flavor. Last week, I decided I would experiment. Today, I have come the closest yet to duplicating her salad. I know without a doubt, she did not use mayonnaise or any salad dressing. The amazing thing is, without these two which are normally main ingredients, the salad I duplicated is almost the same and delicious. And without the mayonnaise, the calories are almost none. In addition, this salad is especially sustaining.

So here goes. Once again, as Alban Mehling always tells us: Please remove all rings and watches. Roll up your sleeves and wash your hands.

Ingredients Needed

Two Cups of pre-cooked Chicken
Handful of Salted Cashews
Two Scallions or Green Onions with Greens (chopped)
One Half Cup Chopped Celery
Half Teaspoon of Lemon Juice or Squeezed Lemon
Garlic Salt, Salt and Pepper To Taste

Cooking Directions

Place the chopped chicken in an electric chopper or blender. Blend until the chicken has become moist, not liquid but moist. Remove all chicken and place cashews in the chopper or blender. Chop all cashews until they are coarsely ground. Remove cashews and place chopped onions and celery into chopper or blender and once again blend until all are just beginning to become moist. Mix the meat, cashews, onions and celery together. Stir in the lemon juice, both salts and the pepper making sure to taste before adding too much salt and pepper.

The final mixture will have a crumbly yet, pate' appearance. Add a few slices of tomato's, a few Captain Wafers and with a cup of your favorite coffee enjoy your meal. To add a bit of greenery, Iceberg or Romaine lettuce is a pleasing addition.

As a final note, it was shocking and sad to receive the information regarding the death of the owner of The Creamery. The owner had an extraordinary menu. Everything on the menu was delicious. Yet, her chicken salad was one item she had hundreds travel for miles to indulge in. I would often purchase a half pint or a pint to sustain me through each craving session. The owner, her restaurant and definitely her chicken salad has been and will continue to be missed. While my version is very good in taste, it is nothing like hers.
