Delicious Antipasto Squares: A Quick and Easy Family Recipe

Libby Pelham
My family is from Ireland and Scotland, but for some reason, I have always loved Italian foods and recipes. I especially love antipasto - a great combination of cheese, Italian meats, and vegetables. Antipasto actually means "before the meal" so traditionally, antipasto recipes are the first course.

But, this delicious recipe that includes crescent rolls, pepperoni (if I could pick one food to live on the rest of my life, I am pretty sure I would choose pepperoni), cheeses, and roasted red peppers is great for brunch, lunch, or even dinner. It is quick and easy and you will have everyone raving about your delicious sandwiches!

For this recipe, you will need to purchase:

two cans of crescent dinner rolls

a quarter pound of thinly sliced boiled ham

a quarter pound of thinly sliced provolone cheese

a quarter pound of thinly sliced Swiss cheese

a quarter pound of thinly sliced Genoa salami

a quarter pound of thinly sliced pepperoni

a 12 ounce jar of roasted red peppers

three large eggs

parmesan cheese

black pepper

If you live near a deli, it is best to buy the meats and cheeses there because they can slice them thinly. If not, you can usually find these meats and cheeses in the refrigerated section of most grocery stores.

Set your oven on 350 degrees. You can make up your squares while the oven is preheating. In a 9 x 13 inch baking dish, unroll one cans of crescent rolls. Alternative layers, lay out the boiled ham, provolone cheese, Swiss cheese, salami, and pepperoni. Once you have used all the meats and cheeses, drain the juice from the jar of roasted red peppers and place them on top of the squares.

In a separate bowl, beat the three large eggs. Once they are mixed well, add 3 tablespoons of parmesan cheese and 1/2 teaspoon of black pepper. Combine well then pour 1/3 of this mixture on top of the roasted red peppers. Cover that with the remaining can of crescent rolls. Use a brush to spread the rest of the parmesan/egg mixture on top of the crescent roll.

Cover the baking dish with aluminum foil and place it in the oven. Allow the squares to cook for 25 minutes, and then remove the foil. Allow them to cook another 20 minutes or until the crescent roll begins to brown. Cut the dish into squares. This is great served warm or at room temperature.

It may be a bit messy, so you may need to use a fork to eat it, but everyone will be raving about this exceptionally tasty dish!
