Breakfast Nachos
Cook 1 lb. bacon and mix it with 8 oz. refried beans. Scatter nachos across the bottom of a baking dish, and spread the bean/bacon mixture on top. Scramble 6 eggs and crumble them over the bean/bacon mixture. Top with 6 oz. shredded cheddar cheese and bake the dish at 350 degrees Fahrenheit for 10 to 15 minutes, or just long enough for the cheese to melt. Serve hot.
Apple Cinnamon Crepes
Core and peel two red delicious apples. Cube the apples and place them in a blender. Puree and then transfer the mixture to a mixing bowl. Add 1/2 tsp. ground cinnamon, 2 1/2 tbsp. brown sugar, 1 tbsp. melted butter and 1/4 cup raisins. Mix the ingredients together and spoon the filling into each crepe. Roll the crepes up and set them in a baking dish. Heat them at 325 degrees Fahrenheit for 10 minutes. Remove and top with a dusting of powdered sugar or a drizzle of your favorite maple syrup.
Morning Stuffed Bell Pepper
Cut the top off of your bell pepper and remove the seeds inside. Any color bell pepper is fine. Bring a pot of water to a boil and set the bell pepper inside. Boil 12 to 15 minutes until the pepper is as soft as you like it. Set the bell pepper in a baking pan. In a mixing bowl, combine 2 eggs, 1 tsp. onion powder, 1/2 tsp. garlic powder, 2 tbsp. diced tomatoes, 1 dash pepper, 1 dash salt and 1 dash basil. Melt 1 tbsp. butter in a frying pan and scramble the egg mixture. Transfer the cooked eggs to the inside of the bell pepper. Top with shredded cheddar cheese and bake in the oven at 325 degrees Fahrenheit for 10 minutes, or until the cheese has completely melted.
You can duplicate this recipe based on how many family members you need to serve.
Gingerbread Waffles
Stir the following ingredients together in a large mixing bowl: 2 cups flour, 2 tsp. ground ginger, 1 tsp. ground cinnamon, 1/2 tsp. nutmeg, 3/4 cup molasses, 2 tsp. baking powder, 1/2 cup vegetable oil, 2 eggs, 1/4 cup brown sugar and 1/2 cup buttermilk. Heat up your waffle maker and spray it with non-stick cooking spray. Add the waffle mixture and cook until the waffles are golden brown. Top with sliced bananas and a dollop of whipped cream.
