1. cup sugar
2 cups flour
1 cup mayonnaise
1 tsp vanilla
4 tsps cocoa powder (unsweetened)
1/8 tsp salt (optional)
1 1/2 tsp. baking soda
1 cup water (boiling)
1 can butter-cream frosting
Sift together sugar, cocoa, baking soda, flour and salt. Next add the mayo to the dry ingredients, mix well, then add vanilla and water again mix good. Pour mixture into a greased and floured 9 inch cake pan. Bake for 25 to 30 minutes at 350 degrees.
When done cool and the top with butter cream frosting.
*for a 9x13 pan double the recipe.
Fruit Squares
1 cup quick cooking oatmeal
3/4 cup brown sugar (packed firmly)
1 cup flour
3/4 cup your favorite fruit preserves
1/2 tsp cinnamon
5 1/3 Tbsp. butter (melted)
1/2 tsp baking soda
1/4 tsp salt
mix oats, flour, brown sugar, salt, cinnamon, baking soda. Add butter and mix well (till crumbly). Take and put aside 3/4 cup of crumbs.
Take remaining crumbs and put into a greased and floured 9 inch pan, pat down. Bake until lightly brown at 350 degrees. Spread preserves over the crust, and top with rest of crumbs. Bake until golden brown (approx 22 to 25 minutes)
*Double recipe for a 9x13 pan
Rosie's Toffee and Chocolate Bars
3/4 cup brown sugar (packed firmly, then split in 2)
5 1/3 Tbsp butter (melted)
1 cup chocolate chips
8 Tbsp. butter (softened)
2 cups graham cracker crumbs
1/2 cup your favorite nuts (chopped fine)
Mix crumbs , 1/2 of the brown sugar and melted butter. Take mixture and put into bottom of a 9x13 inch cake pan that has been greased and floured. Bake until brown, approx 10 minutes at 350 degrees. Take the remaining butter and melt it stirring in the other 1/2 of the brown sugar, cook until mixture comes to a boil, stirring constantly. Pour over crust and bake for 10 minutes. When done, take out of oven and sprinkle the chocolate chips over it while hot. Once the chips have melted spread it over the top, and sprinkle with the nuts.
