Delicious Carrot Cake

2 cups flour (self rising)
1 cup vegetable oil
4 large eggs
2 cups sugar
8 Tbsp. butter (softened)
1 pkg cream cheese (8 oz)
2 tsp. vanilla
3 cups carrots (grated)
1/4 cup carrots (shred very fine)
1 bag powder sugar (16 oz.)
2 tsp. cinnamon (or add more if you like cinnamon)

Mix thoroughly flour, vegetable oil, sugar and cinnamon; then add the grated carrots. Pour batter into 2, 9 inch round cake pans (grease and flour). I prefer making mine in a 9x13 inch cake pan. Bake for 30 to 35 minutes at 350 degrees. Test with toothpick for doneness.

Frosting: Take butter, cream cheese, vanilla and powdered sugar and beat until smooth and easy to spread. Spread frosting on layers or flat cake. For layers frost the sides too. When done frosting top with shredded carrots.

For the holidays I like to add candy pumpkins to top of the cake.

    Hi Bridget, just leave out the items you don't like and use the baby food carrots.

    I like carrot cake, but I prefer smooth carrot cake - no walnuts or any nuts and made with baby food carrots! Yummy!
