Delicious Christmas Fudge Recipes

Christmas isn't Christmas without Christmas Fudge. Try one of these recipes for delicious results: you can go with Cashew Brown Sugar or Christmas Mint.

Cashew Brown Sugar Fudge

1-1/2 teaspoons plus 1/4 cup butter, softened, divided
1 cup packed brown sugar
1/2 cup evaporated milk
2 tablespoons light corn syrup
2-1/2 cups confectioners' sugar
2 cups coarsely chopped salted cashews

Line a 9-inch square pan with foil. Grease the foil with 1-1/2 teaspoons butter then set aside.

In a heavy saucepan, combine the brown sugar, milk, corn syrup and remaining butter. Cook and stir over medium heat until sugar is dissolved. Bring mixture to a rapid boil, stirring constantly for 5 minutes.

Remove from the heat. Gradually add confectioners' sugar; mix well. Fold in cashews. Immediately spread into prepared pan. Cool.

Using foil, lift fudge out of pan. Cut into 1-inch squares. Makes about 3 dozen.

Christmas Mint Fudge

1 1/2 cups sugar
2/3 cup evaporated milk
2 tablespoons butter
1/4 teaspoon salt
2 cups miniature marshmallows
1 1/2 cups white chocolate chips
1 teaspoon vanilla
1/2 1 tablespoon mint extract
2 drops green food coloring

Line a 9-inch square pan with foil.

Combine sugar, evaporated milk, butter and salt in saucepan. Bring to full boil and boil 5 minutes, stirring constantly. Remove from heat and quickly add marshmallows, chips and vanilla then start stirring. Add mint extract and food coloring. Keep stirring until all is melted and creamy smooth.

Pour into pan and refrigerate until set. Lift from pan, remove foil, and cut into pieces.
