Chicken With Asparagus
1 cup chicken (cooked and sliced thin) - 2 Tbsp butter - 1/4 sour cream - 1/2 cup cheddar cheese (shredded) - 3 Tbsp flour - 2 cup asparagus (cut in 1/4's and cooked) - 1 cup chicken broth - 1/8 tsp. pepper - 1/4 tsp salt - 1 tsp rosemary (chopped fresh) - Long grain rice (cooked and enough for how many people you are serving) - 1/4 cup milk -
9
Melt the butter, then add flour and mix until smooth. Once smooth add the milk, broth, pepper and salt, stir constantly over medium heat, cooking until thickened and no lumps. Next fold in the sour cream. Take half of the mixture and spoon into a buttered 1 quart baking dish.
10
Next layer the following ingredients: asparagus, chicken and rosemary. Top with remaining sauce. Top with cheddar cheese. Bake for 30 minutes at 350 degrees until bubbly. Serve over rice.
11
We also like to serve over noodles with Croutons.
Tip
I like to use French bread (we like the flavor), so you will need more slices, it varies on the size of the loaf.
