2 cups of sugar
1/4 cup butter
3 cups of oats
1/2 cup peanut butter
1/2 cup of milk
1/3 cup cocoa
1/2 cup flaked or shredded coconut
1 teaspoon vanilla
Combine sugar, milk, butter and cocoa. Boil for one minute and then remove from heat. Add the rest of the ingredients and stir by hand. Drop onto waxed paper and let set. Yield: about 30 cookies.
Oatmeal Raisin Cookies
1 cup (2 sticks) of margarine or butter, softened
1 cup firmly packed brown sugar (dark or light, whichever you prefer)
1/2 cups of granulated sugar
2 eggs
1 teaspoon of vanilla
1-1/2 cups all-purpose flour
1 teaspoon cinnamon
1 teaspoon baking soda
1/2 teaspoon of salt (optional)
3 cups of oats (quick or old-fashioned, uncooked)
1-1/4 cups of raisins
In a medium size bowl mix together the flour, baking soda, salt and cinnamon; set aside. In a large mixing bowl, beat the butter and sugars until smooth and creamy. Add the eggs and the vanilla; beat well. Next, add the flour mixture and mix well. By hand, stir in the oats and raisins. On ungreased cookie sheet, drop rounded tablespoonfuls evenly. Bake at 350 degrees about 10 or 12 minutes or until golden brown. Cool for about 1 minute on the warm cookie sheet, then transfer onto wire racks. Yield: makes about 4 dozen cookies.
Chocolate Chip Cookies (including a peanut butter variation)
1 cup of butter, softened
3/4 cup of light brown sugar
2 eggs
3/4 cup of granulated sugar
2-1/4 cup of all-purpose flour
1 teaspoon of vanilla extract
1 teaspoon of baking soda
1/2 teaspoon of salt
2 cups of semi-sweet chocolate chips
1 cup of nuts, chopped (optional)
Combine butter, sugar, brown sugar and vanilla in a large mixing bowl. Add eggs, then beat well. Next add the flour, baking soda and salt gradually to the mixture. Mix thoroughly. Add chocolate chips and nuts, stirring by hand. Place on greased cookie sheet and bake at 375 degrees for 8 or 10 minutes, or until golden brown. Remove from pan and cook on wire racks.
Peanut Butter Chocolate Chip Cookie Variation
3/4 butter, softened
2 tablespoons of peanut butter
1/2 cup of sugar
1 egg
1-3/4 cups of flour
Mix all ingredients at a medium speed until thoroughly blended. Add the chocolate chips and stir by hand. Bake as directed above.
