Delicious Low Calorie Cake with Icing

Are you looking for a great tasting dessert without the loads of fat and calories? I recently needed an idea for our company picnic. Each guest needed to bring a covered dish and most of the girls in our company are trying to lose weight and I did not want to show up with a dessert loaded with fat and calories. I also did not want to make something that was not going to have any flavor. I was talking to many people about my dilemma and I finally found the answer I was looking for.

I am not sure where she got this recipe from but my aunt gave me the most delicious cake and icing recipe. I had to try this out at home before I made it for any party. I couldn't imagine making something and not knowing if it had a great taste. So I decided to buy the stuff and make it. The following items is all you need to make the whole cake:

Any flavor of cake mix, 12 ounce can of any kind of diet soda, 16 ounce light cool whip, one large package of sugar free pudding (any flavor of icing you would like).

I made two different flavor cakes and icing. I started with a spice cake and diet squirt. I mixed the two of these together (do not add any eggs, oil or water). After the mix is well blended and smooth pour into a greased and floured 9 x 13 cake pan, leave the cake mix set about 5 minutes than place in the oven (bake as directed on the box). Be sure to leave the cake cool. After cooling the cake, take a wire wisk and mix a 16 ounce container of cool whip (fat free) with a large box of sugar-free pudding (I used cheesecake flavor).

I wondered how this cake was going to rise and I asked my aunt she told me that since I waited five minutes before placing it in the oven helped the rising process. As I baked mine I crossed my fingers and hoped for the best but I truly was amazed, this cake looked no different than a cake baked with eggs and oil.

I made the above flavor cake which ended up going over the best at the party and I also made a chocolate cake with chocolate icing. Both cakes turned out tasty and we felt guilt free eating these desserts. Keep in mind this easy to make recipe for any party or celebration that you are planning. You cake also experiment with your favorite flavors.
