Biscuits, anyone? You don't need a biscuit mix to make biscuits, nor do you need excessive ingredients. You can make quick and easy biscuits using pancake mix by simply adding an egg, a bit of milk, and enough pancake mix to create a thick consistency similar to bread dough. Use your judgement when making biscuit mix, although a single egg, about a quarter cup of milk, and a cup of pancake mix does the trick to make 4 large biscuits. Bake at 400 degrees for about 10 minutes, and you have delicious and fluffy biscuits!
note: a dash of salt and baking soda doesn't hurt either to make these pancake mix biscuits more like regular biscuits, but these are optional. You can also use water instead of milk or do parts of each, although milk makes a fluffier biscuit. Yum!
Pancake mix also makes a delicious pot pie or crust for a dinner meal. Have a dish that requires dumplings? Make a thick pancake batter and throw dollops into your soup or stew, or layer a casserole with a thin pancake batter layer that will rise in the oven. I love doing this for cream of chicken soup or mushroom casserole recipes to help make the meal more filling. Quick and easy.
For pancakes, try making them a sweet and luscious dessert by throwing in chocolate chips, chopped almonds, and crunched up toffee bits. Make sand dollar-sized pancakes and enjoy these soft treats like you would a cookie- a delicious way to use pancake batter when you have a sweet tooth!
Want yummy fruit pancakes but you have no filling? Applesauce, jams, and jellies tossed into your batter can make a real difference- as can adding heavy whipping cream to your batter for a decadent flavor. Try adding nutmed and cinnamon to your pancake batter for a yummy treat that makes your house smell awesome!
