Delicious Post Holiday Salads

I grew up eating and loving salads. Whether it is made up of fruit or vegetables, salads are the perfect choice for healthy eating. You can even easily grow your own ingredients! Kids love to garden and having them grow their own vegetables hill encourage them to eat more veggies! I put together a list of my two favorite salads, one is a mix of everything, the other is taco. Feel free to make any tweaks or substitutions.

There is a salad that I have ate since I was in junior high. I have no idea what it is called, if anything, but a typical garden salad just isn't good unless it has cheese, peas, and boiled eggs. You can use what you like whether it is vinegar, lemon juice, or a dressing. I know Ranch is one of the more fattening dressings but it is my choice. Be sure to shed the lettuce up real good, as it fits in the mouth better. Below is a list of ingredients that will make a salad that will hit the spot, as well as whip your hunger.

Lettuce (fine shredded) Tomato Onion (Vadalia)

Banana Peppers Green Pepper Peas (frozen, but canned peas will work too, drain)

Cheese (cheddar) Hard boiled egg (sliced)

Black olives (sliced)

Another salad that hits the spot is a rich taco salad. This salad to earned a spot in my heart in junior high school. Between the salad listed above, and taco salad, I stayed away from the other food menu of pizza and burgers. Again, I use ranch dressing, but you can substitute and use low fat sour cream. It is probably even tasty enough to eat without any dressing.

Hamburger (lean)

Taco seasoning (I've been using taco bell lately)

Salsa (for topping, and I also put a little bit in the meat after it browns)

Onions

Lettuce (fine shredded)

Cheese (cheddar, or fiesta blend)

Black olives (Canned and sliced)

Tomato

Tortilla chips

Fry hamburger until it is golden brown. Then drain in a colander over a wide mouth ceramic bowl.
Put browned hamburger back into the skillet.
Add a little hot water. And then the taco seasoning. There are instructions on the back of the packet.
Add a little salsa if you want during this stage. Heat meat and seasoning till hot.

Prepare the vegetables for salad as you would for any other salad.
Top with cheese, the taco meat, salsa and dressing if you choose to.
Open your chips and dine away!
