Delicious Potato Latkes for Hanukkah

Needs Eggs and Onion

Ingredients

4 potatoes, peeled and shredded

1 tablespoon grated onion

2 eggs, beaten

1 tea spoon salt

2 table spoons all-purpose flour

1/6 tea spoon white pepper

1/2 cup peanut oil

Expected servings: 4

Preparation

Place the potatoes in cold water till it becomes ready to prepare the latkes. Place the potatoes in a cheesecloth and wring, extracting as much moisture as possible.

Blend potatoes with eggs, flour, salt, onion and white pepper. Place them in a medium bowl and stir them together.

Heat the oil till hot in medium heat. Then place spoonfuls of the mixture (made in the earlier step) into the hot oil. Keep pressing on the mixture to form 1/4 to 1/2 inch thick patties. Once it gets fried (brown) on the current side, turn it reverse and let it brown on the other. Once both sides are browned, drain on paper towels. Now you are ready to serve.

Finally, serve hot. You may serve with one or more of the following:

1. Yogurt

2. Salt

3. Sugar

4. Apple sauce

5. Green onions (chop them if you can)
