1 3/4 cps flour
1 cup oatmeal (quick cooking)
1 c. brown sugar (packed firmly)
3 Tbsp. butter (melted)
2 large eggs
1 1/2 cups water
1 tsp baking soda
1 cup sugar
2 tsp cinnamon
1 tsp vanilla
1/2 tsp salt
Take water and bring to a boil, and then pour over the oatmeal and set aside.
Mix flour salt, cinnamon and baking soda. Take the butter and beat with electric mixer on high until creamy, slowly sugars until blended, then add eggs, only one at a time. Next add vanilla. Slowly add the flour to the mixture, mix until smooth, then stir in the oatmeal mixture. Pour into a 9x5 greased and floured bread pan, and back at 350 degrees for approximately 1 hour. When done let cool in pan for approximately 10 minutes and then remove to a wire rack to cool.
Carrot Nut Bread
1 1/2 cups flour
2 large eggs
1 cup sugar
1 tsp baking soda,
1/8 tsp salt
2 tsp cinnamon
1 1/2 cups grated fine carrots
1/2 cup chopped walnuts (chop fine)
Mix sugar, eggs and vegetable oil. Sift together cinnamon, baking soda, and flour, then add sugar, carrots and walnuts mixing well. Pour into greased and floured bread pan. Bake at 350 degrees for 1 hour. Let the bread cool approximately 1 hour.
* You can take these breads and freeze them for future use. I like to make several at a time, some for fresh eating, and some for later. They are also good to make for holidays, and for gifts.
