The first one is the one which requires the cooking.
Lip Smack Mac-n-Cheese
Ingredients: Velveeta cheese, parmesan cheese, heavy cream, real butter, nutmeg (optional), macaroni (any shape you desire)
Cook macaroni according to package directions
Slowly heat Velveeta (no generics please), parmesan cheese, heavy cream, and real butter in a heavy sauce pan (add cream as needed until it is smooth and creamy) *Make sure not to heat on high and scald the cream
If you desire, you may also add some fresh grated nutmeg (about 1/8 of a teaspoon is all that is needed)
Once the cheese mixture is melted and creamy simply stir in the macaroni
Alright, I did not say this recipe was going to be a low fat healthy one; I said it is lip smacking. Feel free to substitute all the ingredients for low fat if you like. Good luck with that.
Tomato, Onion, and Cucumber Salad
Ingredients: Cucumbers, tomatoes, onions (green onions can be used also), package of Italian salad dressing mix
Mix the salad dressing according to directions
Peel, seed, and slice cucumbers
Cut tomatoes and onions into small pieces
Mix the cucumbers, tomatoes, and onions and pour the Italian dressing over them
Refrigerate for at least two hours or even overnight so flavors will combine
Cucumber and Cream Cheese Sandwiches
Ingredients: Cucumbers, cream cheese, whole wheat bread
Peel, seed and chop cucumbers (about two medium size per 8 ounces of cream cheese)
Make sure the cream cheese is left out at room temperature for about two hours so it will mix well
Mix the cream cheese and cucumbers
Spread on whole wheat bread which has had the crust removed and cut into what ever shape you like
*For the Fourth be creative and divide the cream cheese leaving some of it white and putting a couple of drops of red and blue food coloring in the other.
Tomato, Mozzarella, and Black Olives
Ingredients: Tomatoes, package of round mozzarella cheese, can of whole small black olives
Simply slice the tomatoes (not too thick or thin)
Place a slice of mozzarella cheese on the tomato and place a couple of black olives on top of the cheese
Sprinkle fresh cilantro or other herb of your choice on top
Now for all of those who love the iced coffee but hate having to buy it, here you go.
Iced Coffee My Style
Ingredients: Coffee, milk, sugar or Splenda, vanilla flavoring (or desired flavoring), and crushed ice
Brew coffee slightly stronger than usually
If using sugar mix it with hot coffee to dissolve before adding to milk; do the same with Splenda, although it is easier to dissolve
Pour half of a glass of milk (any kind can be used skim, 1% et cetera), half a glass of coffee and sugar mixture
Add about ½ a teaspoon of vanilla or desired flavoring and stir
Serve over crushed ice
