Tofu Scramble - Scrambled tofu is very popular vegan alternative to scrambled eggs, and just as customizable and easy to make, too. Crumble up extra firm, firm, or silken tofu (your choice!), and then, sauté it in a pan with your choice of seasonings and veggies. Try curried tofu scramble, spinach and tomato tofu scramble, or mushrooms and onions tofu scramble. The options for this vegan breakfast idea are endless!
Vegan Muffins - Vegan muffins are incredibly tasty, and many people think they taste better than the non-vegan variety, as well. You can make vegan muffins by substituting non-vegan ingredients for vegan ones, or searching for a vegan muffins recipe in your favorite vegan cookbook. Try tasty, vegan banana nut, cranberry oatmeal, blueberry, or peach muffins for a sweet vegan breakfast idea.
Vegan Pancakes or Waffles - Vegan pancakes and waffles are also easy to create by substituting non-vegan ingredients for vegan ones in almost any vegan pancake or waffle recipe, or easily finding a totally vegan recipe in the vegan breakfast ideas section of your favorite cookbook or website. Try vegan pancakes or waffles stuffed or topped with fresh fruit like strawberries, blueberries, raspberries, and bananas. You can even make banana nut pancakes or waffles with the leftover ingredients from your vegan muffins!
Vegan French Toast - French toast is surprisingly easy to make vegan. Instead of using cow's milk, eggs, and butter, substitute soy (or rice or almond) milk and vegan butter instead. You can add all of the other already vegan French toast ingredients like cinnamon and vanilla. You can also blend the soy (or otherwise, vegan) milk, cinnamon, and vanilla, with tofu, flour, or bananas to make a thicker mixture, like there would be with eggs. Try tasty fruit toppings like fresh bananas, or apples and raisins for added nutrients and sweetness to this vegan breakfast idea.
You can also choose easy already vegan sides to accompany any of these vegan breakfast ideas, such as homemade hash browns or breakfast potatoes (with peppers and onions, if you'd like), fresh fruit, or granola.
