You will need the following:

A large pumpkin
1 chopped medium red chilli
2 chopped garlic cloves
1 tub single cream
Coriander, salt and pepper

After you have gathered all of the ingredients together, it will take you less than thirty minutes to prepare from start to finish, thus making this the best pumpkin soup recipe for Thanksgiving or a quick and wholesome meal during those chilly winter months!

Start by chopping the pumpkin into large rough chunks, removing all of the seeds and skin as you go. When all seeds are gone, chop the pumpkin chunks in half again and place them in a pan of boiling water. That should be left on the stove for between five and ten minutes, until the pumpkin is soft. Drain the water but leave it on the stove in a pan as you will need it shortly.

Whilst the pumpkin is boiling, you should place the garlic, chilli, salt, pepper and coriander in a blender, creating a paste. When the pumpkin is soft enough, add that to the paste and blend it well before placing it back in the original saucepan with a little of the water and the cream. Simmer the pumpkin soup on a medium heat for ten minutes, stirring all the while.

Et voila! This quick and easy Thanksgiving recipe takes less than half an hour and serves four. It is also suitable for freezing so any leftovers will make a delicious meal when the temperature drops outside. This pumpkin soup is definitely the best possible way to start off Thanksgiving!
