It All Starts with the Egg

Ever went to a family gathering or event and been able to eat just one deviled egg? It's hard to do, especially if it is a really great recipe. The variances in recipes differ sharply from family to family, person to person.

Everyone likes their own stuffed eggs recipe and what you blend in is what makes everyone's choice different. So, lets just discuss egg technique preparation and then the many various ingredients that could be added to create delicious deviled eggs to your preference.

It all starts with the egg and so I guess that answers that life long question of whether the chicken or egg came first. You want to choose good eggs for stuffed egg recipes, but the fact is since a deviled egg starts with boiling and peeling away the shell, fresher is not always better. If truth be told a really fresh egg is hard to peel. But with the longevity of an egg if purchased from a store, they're probably just right. See, the farmer had to gather them up and then get them to the store. This is a process he has 30 days to complete. Then the store itself has 30 days to sell the eggs. The FDA says that eggs can be stored at home in your refrigerator for up to 5 weeks.

So, you have eggs and you're going to boil them to make some of those great deviled eggs. Use a large enough pot so that you have only a single layer of eggs. Remember that you're not boiling the eggs, but the water they're in. As soon as the water comes to a boil remove the pot from the heat and cover, letting them stand for approximately 20 minutes is recommended.

Now you're ready to peel these eggs for stuffed eggs recipe. Run cold water over them and when they're cooled off, crack the shell and roll the egg back and forth in your hands. This is for loosening the membrane that is under the shell. To complete the peeling processes for your deviled eggs just peel away the shell while holding the egg under running water.

Now you are ready to cut and stuff your eggs. You can cut the egg in half, but lengthwise is recommended so they will sit better. Take the yolks out and set aside, as this is the base for your stuffed eggs recipe. When you've finished removing the yolks gather the other ingredients you want to add. Mix whatever you've chosen together into a paste. Some people like their egg stuffing really smooth and creamy and even use a piping bag to fill the deviled eggs in swirls. Basic ingredients for most stuffed eggs recipes will start with salt and pepper to suit taste. Mayonnaise is usually the filler ingredient that makes the yolks beat into a smooth, pasty consistency. Mustard is usually added to give it a little zing for the old taste buds. Some folks add a little vinegar and then sprinkle paprika on top for a garnish once the eggs are stuffed.

Add a pinch of garlic or onion salt to your basic stuffed eggs recipe ingredients. For a southwestern flair to your stuffed eggs recipe, add a little cilantro or chili powder or sprinkle on top for a garnish alternative to paprika.
