Ingredients
9 inch unbaked pie shell.
2 c of unsweetened cherries.
1 tablespoon flour.
1/4 of a c of soft margarine.
1/2 cup of sugar replacement.
2 x egg yolks.
1/4 c of evaporated milk.
1/2 tablespoon of vanilla extract.
2 x egg whites.
2 teaspoons of granulated sugar replacement.
First drain the cherries really well and pour into unbaked pie shell. Cream the margarine, sugar replacement and flour.
Add egg yolks and beat until really smooth. Next add evaporated milk and vanilla extract. Pour over the top of cherries.
Bake at 450F for 10 minutes. Then reduce heat of oven to 350F and bake for a further 30 minutes. Meanwhile whip egg
whites until soft peaks form. Add sugar replacement and whip until thick and stiff. Put on top of pie, making sure edges
are sealed. Bake at 350F for a further 12-15 minutes, or until lightly brown.
Perfect for parties like Halloween. Just place some scary plastic spiders on top. Kids love it.
