Delicious Diabetic Peanut Butter Chocolate Chip Cookies

Do you have a child with diabetes? This Peanut Butter Chocolate Chip Diabetic Cookie will bring a smile to their face! Children are not the only ones that will love this diabetic cookie recipe, it is a great cookie to be enjoyed by all ages! Warm and gooey, right-of-the oven is when they are the best!

Here's a list of ingredients that you will need:

1/2 stick of butter, let warm to room temperature

3/4 cup sugar

1/3 cup egg whites

1/2 cup peanut butter

1/4 water, room temperature

1 ½ cups flour

1 tsp. Vanilla

3/4 tsp. baking soda

1/2 tsp. salt

1/2 cup chocolate chips, I prefer semisweet

I always like to assemble my ingredients before I start, this really makes the cookie making process go a lot faster!

First, you will need to preheat the oven to 350 degrees F.

Spray cookie sheet with vegetable cooking spray so cookies don't stick.

At a medium speed, cream margarine, sugar and peanut butter until the mixture is light and fluffy. Add egg whites, water and vanilla and mix on the same speed for roughly 40 seconds, be sure to scrape the sides of the bowl. In a separate mixing bowl, stir salt, baking soda, flour and chocolate chips together, fold the mixture so you don't break the chips apart. Add to creamed mixture and mix for approximately 1 minute.

Drop 1 tablespoonfuls of dough onto cookie sheet. Bake 10-12 minutes, I like to bake a little less because my son likes gooey cookies!

Remove from cookie sheet and place on wire rack or wax paper to cool.

Makes about 30 cookies
