Diabetic Dessert Recipe

This simple and delicious dessert can be enjoyed by anyone that is on a diabetic diet.

Chocolate Kahlua Cake

1 box devil's food cake mix
1 box sugar-free instant chocolate pudding mix
1/4 cup semisweet chocolate chips
1/3 cup Kahlua
1-1/4 cup nonfat vanilla yogurt
1/4 cup vegetable oil
1/3 cup skim milk
1 large egg
3 large egg whites
cocoa

Preheat you oven to 375 degrees Fahrenheit. Grease a 13 x 9 pan using a nonstick spray or a light coat of shortening and dust with cocoa.

In a bowl, combine the cake mix, instant pudding, Kahlua, nonfat yogurt, vegetable oil, milk and eggs. With a mixer beat for 2 minutes on a medium speed. When the batter is well blended stir in the chocolate chips.

Pour the batter into the greased pan and place into the oven. Bake for 50 minutes. Check to see if the cake is finished baking insert a wooden toothpick into the center. If the toothpick comes out clean then the cake is finished. Cool before cutting. Enjoy!
