Diabetic Desserts for Weddings

These are 2 delicious diabetic and sugar free recipes that are really good to be served at a wedding reception. It is important to have some sugar free desserts for those who are diabetic or who prefer sugar free desserts. Make these 2 sugar free and diabetic desserts when asked to make a dessert to bring for someones wedding.

Diabetic Brownies

4 c. graham cracker crumbs (approx 48 crackers

2c. walnuts (chopped)

6 oz. chocolate chips

3 tsp. Sweet N' Low

2 c. skim milk

1/2 tsp. salt

Mix all ingredients until well blended. Pour into 13" x 9" cake pan (greased and floured) Bake for 30 to 40 minutes at 350 degrees.

2 1/2 c. apples (diced and peeled)

2/3 c. vegetable or canola oil

3 tsp. vanilla

3 eggs

1/4 c. raisins

1 Tbsp tapioca

1 Tbsp. baking soda

1 tsp. cinnamon

1/2 tsp. salt

Mix all ingredients together until well mixed. Pour into 10" x 5" x 3" bread pan. Bake at 350 degrees for 40 to 60 minutes. When cooled sliced into thin slices and then cut each slice in half.

Pineapple Diabetic Gelatin Squares

8 pkgs Knox gelatin

1/2 c. unsweetened pineapple juice

2 c. boiling water

2 tsp. Sweet N' Low

2 c. orange juice

Mix gelatin and pineapples juices and add boiling water, stir until gelatin is dissolved. Stir in Sweet N' Low and orange juice. Pour into 13 x 9 inch cake pan and chill until firs. Cut into squares. Makes 4 to 6 dozen squares. (Each square has 4 calories).

Delicious Lemony Diabetic Squares

3/4 c white flour

8 Splenda packets

2 eggs

1 tsp grated lemon rind

3/4 tsp vanilla extract

6 Tbsp fresh lemon juice

2 1/4 tsp cornstarch

1/8 tsp salt

18 Splenda packets

4 Tbsp margarine melt (cool)

1 1/4 Tbsp grated lemon rind6 Tbsp margarine (cut into pieces)

Combine flour, salt, 8 Splenda packets, cornstarch, and in a medium bowl. Cut in margarine until mixture looks like coarse crumbs. Sprinkle with vanilla and lemon rind; mix with hands to form dough.

Press dough evenly on bottom and 1/4-inch up the side of an 8 - x 8-inch baking pan.

Bake until lightly browned, about 10 minutes. Cool on wire rack.

4 Beat eggs, mix in lemon juice and 18 packets of Splenda then add melted and cooled margarine, and lemon rind.

Pour mixture over crust

Bake at 350 degrees for 15 minutes until lemon filling is set. Cool and Cut into squares.

    Yes, there is a title missing. It is a healthy Diabetic bread to serve. I can't believe that it is not there. it was when I sent it to be published.
