Diabetic-Friendly Lemon Tiramisu

Instructions:

1. Add 2 tablespoons of vegetable oil in a deep skillet on medium high heat.
2. Chop 4 cloves of garlic and add to the oil.
3. When garlic turns light brown, add the following: Chopped half onion, 2 green chilies (quantities can be tweaked depending on the desired level of hotness), 4 teaspoons of salt, 1 teaspoon of turmeric powder.
4. Cook for 3 to 5 minutes and then add 2 tablespoons of tomato paste.
5. Cook for another 3 minute and add 2 glasses of water and 2 cans of rinsed kidney beans.
6. Mix the contents in the skillet and cover it for 15 minutes.
7. Uncover the skillet and add dried cilantro. Mix the contents for few seconds and turn offThis is a recipe I was given back a few years ago when I was searching for a friendly diabetic recipe but one that would help with my sweet tooth.

Lemon Tiramisu-

First you will need the following,2 packages of fat free cream cheese, softened

1. around 6 packs of sugar substitute
2. 1 teaspoon, vanilla
3. 1/3 cup of water
4. 2 cups of frozen "cool whip" fat free brand
5. 1 box of sugar free gelatin, lemon flavored
6. 1/4 cup. of water
7. 1/2 cup. of raspberry preserves
8. 2 tablespoons of sherry
9. 2 packages of lady-slippers
10. 1 pint of raspberries

Directions need to be followed precisely. They are as follows,

1.Combine the cream cheese, with the sugar substitute, along with the vanilla and mix, or beat with mixer, until smooth. Set aside.

2. Combine the water with the gelatin in small microwave bowl, then microwave on high for around 30 seconds, or until the water starts to boil, and the gelatin is mixed. Let cool.

3.Add gelatin mixture and cream cheese mixture, while beating about one minute. Add the "cool whip" and beat one minute more.

4.Whisk the preserves and the sherry . Reserve 2 tablespoons of the mixture. Spread in a 11x7 inch glass baking dish , about 1/3 cup of the preserve mixture.

5.Split the ladyfingers in half, place half in bottom of baking dish. Spread half of the cheese mixture evenly on the ladyfingers, then spread the remaining preserve mixture over the ladyfingers. Top with the remaining cheese mixture, cover, refrigerate for two hours. Drizzle with reserved preserves mixture and the remaining raspberries.
