Dishes and How to Enjoy Eating Them

I'm not one to know great recipes to share, but I will share how to enjoy a meal with your loved one. My wife Karen loves it because the hungrier, I get the more I cook so you know there will more than enough for one meal. It is a dangerous time to shop too. One guest who was here last week was a retired nutritionist and caterer who was quite successful in England. They currently live in Canada. She shared a nice addition to whole grain cereal that DOES NOT cater to the low-fat, no-fat, low-cal, no-cal philosophy. Simply, it was adding two or three tablespoons of whole milk, organic, unflavored yogurt with a handful of fresh blueberries to the cereal I was eating. That cereal was Nature's Path Organic Flax Plus Granola Cereal with Pumpkin Seeds, one of the best cereals I ever ate.

The next is something I put together; nothing particularly special about it except in the way it is eaten. Take three or four extra-large eggs, one large onion, diced, a bunch of sliced mushrooms cut length-wise, three diced, medium, red potatoes, four diced sausages, I prefer turkey, ½ cup of shredded cheese, any kind, a couple of dashes of sea salt and a few twists of Four Seasons Peppercorn Mill because it has several kinds of pepper.

Get a large skillet and pour about a cup of sautéing and grilling olive oil. Filippio Berio makes it. Let it get hot with medium high heat then add the potatoes and fry them till they are almost done then add the onions until they are almost translucent, lower the heat and add the mushrooms and sausage if they are precooked, which means leftover in my book. We serve sausage on certain days, some days they are all gone some days they are not and those that are not I will use this way. Otherwise add the sausage before the onions. Keep the heat about medium and stir slowly. Lower the heat to low and let simmer a few minutes and make sure the kitchen door is open. It is time to eat when I hear Karen coming down the stairs saying "I CAN SMELL THAT!"

Before we eat I take the pan and wave it in front of her to be sure it got her attention. I know I got it when I hear "you're a brat!"

Get one of those extra large salad bowl or soup bowl. Whatever it is, it is big and wide and just big enough for everything to fit. Set the bowl between the two of you and dig in! Keep napkins handy. As we eat, we start feeding one another and as the bowl empties, you notice that the bites get smaller and smaller as one tries to save the last for the other. It is just an idea that keeps a couple closer on busy days and another way to share.
