Disney's Pop Century Cheesecake

Have you ever been to Disney's Pop Century Resort in Orlando, Florida? If you answered yes most likely you have tried the Tye-Dyed Red Velvet Cheesecake. If not it is a must on your next trip! This brightly colored cheesecake is such a tasty treat for the whole family. Its even better if you have the Disney dining plan; you can get this dessert included everyday for no extra cost. The only downsize is the calories. I am not sure of the exact count, but I have never known cheesecake to be a diet food. Or you can also take my motto, "Vacation calories do not count." That only last to a week after you get home though and realize your clothes no longer fit.

Personally every time I leave the Disney Resorts I feel a little sad. I mean who wants their vacation to end? Each time a trip ends I decide to bring a little something home with me. I usually bring home small souvenirs; jewelry right down to a soft and cuddly stuffed Pluto. This time I decided I wanted to bring home a little of the food. With new U.S. Postal regulations I was not able to ship any of my favorite candies home so I decided I needed the recipe for this fabulous cheesecake. Of course, I was staying at the Pop Century Resort and the staff there was so helpful. I went to the front desk and a reservation agent was able to track down the recipe for me. That's another great thing about Disney; they are great with sharing! They just really want you to leave having had the best possible experience.

The recipe below is quick and easy. I recently made it for my sons second Birthday party and it was such a success. I cheated slightly because I just purchased a box of Red Velvet Cake as opposed to making it from scratch. Be careful if you are in a hurry like I was; the red velvet cake can stain the counter tops. The kids loved all the different colors. I did make two different cheesecakes and they did come out slightly different. The taste was the same, but the tops of the cakes did vary in color (where the food color had been applied and settled varied). If you are making more than one cake do not get discouraged if they do not look identical. The taste will still be superb. Happy Baking!

Disney's Pop Century Tye-dye Cheesecake

Ingredients Needed:

Box of Red Velvet Cake mix

16 ounces cream cheese

½ cup sugar

1 tsp vanilla extract

2 large eggs

5 different colors of food coloring

¼ tsp almond extract

¼ cup of sour cream

Take your box of RED VELVET CAKE mix and prepare using directions on box. Use half of the batter and pour in a 9 inch circle pan. You can discard the extra batter. Bake the red velvet cake following the directions on the box. When finished set the cake aside and allow to cool.

Preheat your oven to 325 degrees.

Take all left over ingredients except the eggs and sour cream and beat together in large bowl. Once smooth beat in eggs one at a time and then add the sour cream.

Once complete seperate the mixture into five smaller bowls. In each bowl add food coloring to the mixture (suggested colors pink, yellow, blue, green, and purple). Once your colors are mixed pour each one on top of your cooled red velvet cake. The more you swirl the mixture the less visible each color will be.

Bake for 35 minutes. When the cheesecake no longer jiggles when you move the pan you are done.

Remove cheesecake from the oven, allow to cool, and then refrigerate. After two hours remove and enjoy!
