Fall Wedding Menu: Spiced Mixed Nuts

As an appetizer, serve different types of spiced nuts. Some of them can be simple and salty, or you can even get some toasted sugary nuts. Have a variety of types and flavors available in separate dishes for your picky (or allergic) guests.

Fall Wedding Menu: Pumpkin Coconut Soup

A delicious, warm, and hearty pumpkin soup is a great item to include on your fall wedding menu. It can be made in bulk from mostly canned ingredients, but it tastes delicious and the coconut adds a great bit of flavor that will make the soup feel more gourmet.

To make a large pot of soup (30 servings), you will need 2 onions, 3 large cans of pumpkin puree, 2 regular size cans of coconut milk, and 4 cans of chicken broth. The recipe can be adapted for larger numbers as needed. First, sauté the onions in a little bit of butter, cooking them until they are just becoming soft. Then add all of the chicken broth and canned pumpkin, mixing well. Season to taste with salt, pepper, allspice, and a little bit of nutmeg, and simmer this for at least a half hour to let the flavors mix. Then add the coconut milk, and if desired, add some water to thin the soup, and cook just enough to finish heating it through. Serve with toasted walnuts as a garnish.

Fall Wedding Menu: Fresh Salad

Put together a fall salad featuring deep-colored mixed greens topped with walnuts, blue cheese, and apple slices. Lightly toss the salad with a simple balsamic vinaigrette dressing that will pull together the flavors.

Fall Wedding Menu: Pork with Apples

For the main course, bake pork with apples, brown sugar, and sliced pecans. Any part of the pig tastes good in this combination, whether ribs, chops, or tenderloin. You can even top it all of with some maple bacon for some added flavor. Serve it over rice or couscous.

Fall Wedding Menu: Apple Crisp

For a great fall wedding dessert, serve some apple crisp. You can even have it instead of cake, if your traditional side is not getting in the way. To make a delicious apple crisp, peel, slice, and core a lot of apples. Then spread a thin layer in pans, sprinkle some brown sugar on them, and add another thin layer, totaling about 2 inches of apples. In a separate bowl, mix together sugar, oatmeal, butter, and cinnamon to make the topping, and crumble it over the apples. If you want to add a fancy layer in between, whip together some cream cheese with butter and sugar, and spread it over the apples before putting on the crumble topping.

Fall Wedding Menu: Apple Cider

Following with the apple theme, apple cider can be served either hot or cold, depending on the weather and setting. You can either purchase cider, or just get apple juice and heat it up with mulling spices to add the cider flavor to it. Another delicious apple beverage is sparkling apple juice, which can be purchased as such, or you can add club soda to apple juice. Whatever apple beverage you are serving, have some thinly sliced apples floating in it to make it classier.
