It's not that they can't stomach the thought of eating the little guys, their fascination is fueld more by the fact that crayfish are simply too fun and too good of an addition to a fish tank to ignore.
While regular old fish tanks can get boring for kids, few get tired of watching crayfish scuttle about the bottom of the tank. They do interesting things such as building shelters when the weather turns stormy and eating or at least attempting to eat anything they find on the bottom of the tank.
The bug-eyed lobster-looking creatures are cheap and a great addition to any tank because of the personality they add as well. If they get threatened (or at least feel the least bit threatened), they will scuttle away quickly.
Crawfish from the Louisiana area for example are eaten quite often but in the northern states you might be just as likely to see them on the inside of a fish tank as you are in a boiling pet or on a dinner plate. The northern states also are filled with people who love to catch them recreationally and kids keep them as pets, even if only on a short-time basis, in their fish tanks at home or in small cartons if that's all they've got.
You can feed them anything from shrimp pellets to more interesting fare sure as peas and carrots. Crawfish will center themselves over the carrot for example and then proceed to chow down for a solid 10 minutes or so at least.
Also, crayfish have a wide array of bright-colored shells ranging from eletric blue to fire-red and more. You can find them at various sites including the ones listed in this article.
While crawfish can be tasty, don't forget that they make fun aquarium pets as well. Next time you see them boiling in a pot, think about the joy they're capable of brigning to children in a fish tank as well!

We had one for a couple of years -- brought it home after my son's third grade class had been studying them. She was a pretty funny little pet, used to make a lot of noise with her claws when it was feeding time!
