Don't Throw Away that Left Over Coffee, Make a Cake with It

JAMIE MYLES
I grew up in a house where a twelve cup coffee pot was always warming on the stove. I came to equate the smell of fresh perked coffee with the warmth and familiarity of home. Now that I have my own home, I still enjoy the wonderfully inviting smell of fresh coffee wafting through the kitchen.
By now you Have probably figured out that I love a good cup of coffee. That being said, I generally have about a quarter of a pot left over When everyone has drank their fill. I used to end up just pouring the left over coffee down the sink until I found out from my' then 95 year old, aunt that there are much better things to do with it.
Do you always end up pouring half a pot of coffee down the drain? Well here are some better uses for your left over Java. Coffee is a great flavoring and can really add rich flavor. Why not freeze left over coffee in an ice cube tray and use it to add to iced coffee instead of watering your drink down with regular ice cubes?

Substitute coffee for water in your brownie or chocolate cake mix. It will give your desert a richer flavor.
Making stew? Add some leftover coffee to your liquid you won't be disappointed in the zesty flavor.

Add strong coffee when making a barbecue sauce. It will enhance the flavor of whatever you put on the grill.
Try marinating meat in coffee. It not only tenderizes, but also adds an earthy flavor that will have them asking for seconds.

What about sprucing up the baked beans? Just substitute coffee for water in your favorite recipe or add a little coffee when heating up canned baked beans.

Now go ahead, make another pot of coffee. When your done drinking your fill, just use what's left to make a cake or a pot of stew.
