1 2 ½ to 3 ½ lb. chicken
1 big or 2 small cloves of garlic, or about 1 tsp of chopped garlic
3 Tbs. of butter at room temp
1 tsp salt
1 tsp black pepper
1 tsp paprika
½ tsp ground cumin
½ tsp onion powder
2 Tbs. brown sugar
½ tsp. chili powder
1 tsp. lemon pepper
Wash and dry chicken and sit in dish or on the cutting board. In a bowl, add chopped garlic and 2 Tbs. of butter together. Push this mixture down under the skin of the chicken breast to help keep it moist. Rub the outside of the chicken with the other Tbs. of butter. Combine all the spices and brown sugar together and rub chicken with spices until covered all over. Pop open 1 beer and set chicken over it, so that the can is inside of the cavity. Put on a hot grill at a temp of 325. You want to have the chicken about 6-8 in. from the coals. Pop open the other beer and drink while waiting for the chicken to cook. Grill the chicken for 1 to 1 ½ hours, depending on the size of the chicken. It's done when the wing can be easily pulled off.
