Easiest Best Zucchini Bread from Old Mississippi
Old Fashioned Zucchini Bread Recipe
Many years ago, my patients and I put together a cookbook called "What's Cookin" and a lot patients contributed their favorite recipes. The cookbook was a huge success and my copy was washed away in Katrina. Fortunately, one of my patients had a copy which survived and I was able to make a copy of her book. One of the recipes was for zucchini bread which is easy to make.
Here is a simple old zucchini bread recipe that is easy to prepare.
Ingredients:
1 box Jiffy corn bread mix
1 c. Velveeta
2 cups shredded raw zucchini,
1 medium onion chopped
2 egg whites
Directions:
Preheat oven at 350 degrees
Sauté Zucchini and onion in oleo
Mix all remaining ingredients together.
Bake in greased 9x 13 baking dish at 350 degree for about 50 to 55 minutes
