Easter Bunny Pound Cake Recipe

I remember from the time I was a kid that my mother used to make an Easter Bunny Cake at Easter time and she would decorate it with a hat and bow around his neck. It would be covered with chocolate icing and she would put pink eyes, white icing and coconut for the tail. She made it in a bunny mold. So when I got married and had children I wanted to carry on the tradition, so I make this Easter Bunny Cake every year. The pound cake is my mothers recipe, not box cake. This is not a sweet cake, but it is good and a very solid pound cake. I would like to share this with you. We call this our " 5 Egg Pound Cake "

Bake at 350 degrees for 60 to 80 minutes

Ingredients:

1 cup of spry
11/2 cups of sugar
2 cups of flour
5 eggs
1 tsp. vanilla or butternut vanilla- ( I like butternut vanilla )
1/8 tsp. salt
1/8 tsp. of mace

Cream spry and sugar together. When the sugar is incorporated into the spry then add eggs one at a time beating well after each egg. Add flour, salt and mace, then add vanilla and beat well. This is a pretty easy recipe and should only take about 10 to 15 minutes.

Grease the bunny mold. Fill the bottom half of the mold till it is filled to the brim. Get the batter in all the areas, like the ears, nose and tail, use a spatula to do this. Cover with top of mold. Place on a cookie sheet and put in the middle of over. Bake for 60 to 80 minutes.

After the cake has finished cooking, take out and put on cooling rack. Take cake out of mold when it is cool enough too touch. note: ( Do not let the cake sit in the mold to long after it is cooked )

Once cake is fully cooled you may need to scrape some of the bottom off so it stands straight. Spread chocolate icing all over the Easter Bunny Cake except the tail. Buy the softer chocolate, it will spread easier. Then put white icing on the tail and press coconut onto the white icing.

Buy the pink icing the comes in the tube and spread it in the ears with a spatula. Put a little dot of the pink icing on the nose. Then dip a toothpick into the icing and make whiskers on both sides of the face. I usually put 3 on each side.

With the tube of pink icing go around the bottom of the bunny. Buy a bag of jelly beans and place onto the icing around the bunny. Then take a pink jelly bean and cut in half. Put a dot on each side of the face where the eyes should be, and take half of the pink jelly bean and place flat side down onto the icing.

Go to any craft store or department store and get a small hat. You can use a straight pin to keep it in place on his head if the hat does not have a wire. Then you can use any color ribbon you would like, put that around his neck and make a bow. That's it, "your done".

Since this Easter Bunny Cake has chocolate all over the outside it will stay fresh for about a week. It can be made a few days before Easter.

When it is time to eat this Easter Bunny Cake start cutting slices from the tail.

This makes a beautiful center piece for any table and it also tastes good.
