Easy, Fun Easter Dessert!

Looking for an easy, fun dessert for the kids this Easter? These Easter Ice Cream Cone Cupcakes are both easy and fun! Here's the directions for you to make Easter Bunny and Easter Basket Ice Cream Cone Cupcakes.

Ingredients Needed To Make Easter Ice Cream Cone Cupcakes:

Cake mix and ingredients to prepare.

Frosting - either bought or homemade

Ice Cream Cones with flat bottoms

Coconut

Green food coloring

Candy - jelly beans, licorice, small chocolate bunnies in foil, fruit strips or Extreme candy. Use your imagination for decorating the Easter Ice Cream Cone Cupcakes!

Prepare a cake mix as directed.

Fill ice cream cones with about 2 tablespoons of prepared cake batter. Be careful not to overfill or the batter will overflow as it bakes.

Cook in cupcake pans - each cone has a place to sit so they won't fall over as easily as on a baking sheet.

Bake 20 minutes in a 350° oven. Test for doneness with a toothpick in the center. Let cool.

Now the decorating fun begins!

To decorate Easter Bunny Ice Cream Cone Cupcakes:

Frost a cupcake. Cut a jelly bean in half for the eyes with kitchen scissors. Push into frosting. Cut another jelly bean in a triangle shape for the nose. (Or you could use chocolate chips, raisins, M & Ms - use your imagination!) For the ears I cut an Extreme candy strip with a point at the top of them. For the whiskers and mouth I cut an Extreme candy into narrow strips and cut to length. I had to put a piece of licorice behind the ears so they would stand up, but my grandson didn't seem to mind...more candy!

To decorate Easter Basket Ice Cream Cone Cupcakes:

The Easter Basket Ice Cream Cone Cupcake is easier and faster to decorate than the Bunny cupcake.

Frost a cupcake. Sprinkle green coconut on top of frosting. To make colored coconut put desired amount of coconut into a plastic baggy. Add a few drops of green food coloring. Mush the food coloring into the coconut for a couple of minutes.

To form the basket handle put the ends of a piece of licorice into either side of the cupcake. Stick a foil covered chocolate bunny into the cupcake. Set a few jelly beans on top of your basket and it's ready to eat!

When my two year old grandson saw his bunny cupcake he got a big smile on his face. Your family will also have smiles when they see these fun Easter Ice Cream Cone Cupcakes!
