Easy Back to School Snacks

Homemade Trail Mix

1 bag of Goldfish crackers

1 13.5 ounce box of Cheerios (you can use either original or honey nut depending on your preference)

1 bag of pretzels (I use the original pretzel shape, but you are welcome to use any shape that you like)

1 16 ounce bag of organic chocolate chips (you can use regular, but I prefer the taste of organic)

Combine all ingredients in a large Ziploc bag and shake up. Then, distribute the mix equally into smaller Ziploc bags. This snack is wonderful for an after school snack or a sleepover.

Organic Fruit Kabobs

1 pint of organic strawberries cut in halves'

1 organic cantaloupe, cut into small chunks

1 pound of organic grapes (I prefer the red ones, but you can use the green if you prefer)

1 small organic watermelon, cut into chunks

1 bag of large kabob sticks

Chop and prepare fruit as described above. Take kabob stick and place fruit on stick in the following pattern: watermelon, cantaloupe, strawberry, and grape. Continue this pattern until the stick is full. If you have young children around, it is recommended to break off the pointed end of the stick once you have completed the kabob. Please feel free to experiment with different types of fruit and patterns. This snack makes a refreshing treat for after school or after taking part in a sporting event.

Organic Veggie Face on a Tortilla

1 package of whole wheat tortillas

1 small package of organic baby carrots

1 organic red pepper, sliced into strips

1 small bag of organic broccoli florets

1 organic cucumber, sliced into round pieces

1 small package of organic cherry tomatoes, sliced into halves

1 16oz container of cream cheese (you can use the reduced fat or fat free kind if you need to do so)

Prepare veggies as described above. Take tortillas and spread cream cheese over one side of each one. Take veggies and make a face on the tortillas. I usually use the carrots or broccoli for eyebrows, the cucumbers for eyes, the cherry tomatoes for the nose, and the red pepper for the mouth. Feel free to let your children create their own masterpiece. Then, eat and enjoy.

Cinnamon Toast

1 loaf of whole wheat bread, sliced

1 small container of butter

1 small tin of cinnamon

Toast bread in a toaster or toaster oven. If you do not have one of these available, you can make this in the oven (see directions below). As soon as toast comes out of the toaster, spread butter onto the toast. Sprinkle buttered area with cinnamon and enjoy.

If making the toast in the oven, simply spread butter onto bread and toast in oven at 150 degrees. Check bread after about 5 minutes to see if the butter has melted; if so, remove from oven and sprinkle with cinnamon.

These easy back to school snacks can even be made by kids. However, if the cinnamon toast recipe has to be made in the oven, parental assistance is recommended.
