10 lbs pork shoulder
pinch salt
pinch pepper
2 teaspoons chipotle seasoning or seasoning salt
2 garlic cloves, minced
1 medium onion, minced
2 tablespoons olive oil
1 cup barbeque sauce
1/2 cup apple cider vinegar

Prepare pork
Place a large piece of aluminum foil in a roasting pan. Put the pork shoulder in the center of the foil. Sprinkle the pork with the salt, pepper, chipotle seasoning and minced garlic. Top with minced onion. Wrap the foil around the pork and roast at 350 degrees for about 4 and a half hours (until meat thermometer reads 185 degrees when inserted in center of pork).2
Shred pork
Remove the pork from the foil and allow it to cool slightly (about 10 minutes). Reserve the minced onion.The pork will be very tender so you can easily shred it with two forks or a knife. Take care to remove and discard all fat.3
Create sauce
Combine 1 cup of barbeque sauce and 1/2 cup of apple cider vinegar. Saute the reserved onion in 2 tablespoons of olive oil. Add the onion to the sauce mixture.4
Combine and serve
Put the shredded pork in a crockpot (or large saucepan) and add sauce. Heat thoroughly on low setting. Serve warm with large kaiser rolls. Pairs well with cole slaw, potato salad, hot beans and corn on the cob.- Crock Pot Pulled BBQ Pork Recipe
