One of the best things to eat in the morning for breakfast is eggs. However, eggs can sometimes take a long time to prepare when you are busy getting your morning started. You can prepare a breakfast egg casserole the night before, keep it in the fridge overnight, and bake it in the morning. To make a simple egg breakfast casserole, combine six to eight eggs, a half cup milk, salt, pepper, onion powder and a dash of nutmeg to taste, a quarter cup of flour. Beat thoroughly, then add whatever you like. Some people love a spinach, cheese, and egg combination. Others enjoy cheese and a breakfast meat like bacon. Pour in a casserole dish, and refrigerate overnight. In the morning before you take your shower, put the breakfast casserole in a 400 degree oven and bake for about 20 minutes. Turn the oven off and allow it to cool a bit as you finish getting ready. Then you and your family can enjoy a hot breakfast in the morning!
Another breakfast I like in the morning is a baked oatmeal breakfast casserole. This is a filling, nutritious meal to make on those chilly mornings. Simply prepare some steel cut oats in a casserole dish according to directions. I like to mix the steel cut oats with milk instead of water for a rich taste. Remember, these are look cooking steel cut oats, however, you won't have to wait long when you make it the night before! I also add a tad more water or milk than the directions say (about a half cup) because some will absorb overnight in the fridge. Then the fun. Add some raisins, cinnamon, vanilla, honey, or whatever combination you like, and refrigerate your baked oatmeal breakfast casserole overnight. In the morning, simply put it in the oven at 350 degrees for about 30 minutes. You can do this while you get ready. Another idea is to cook it in the Crockpot on low overnight.
A good breakfast idea is to make a baked rice casserole. Many people in the world eat rice in the morning as a breakfast item. It is very good, and tastes a bit like grits. It is a good alternative if you have a corn allergy as well. You simply take leftover rice from the night before, place it in the casserole dish with some milk and other additions. I love to put milk, strawberries and a large dollop of strawberry jam, then bake in the oven at 350 degrees for about 30 minutes. Other ideas could include maple syrup and raisins, or you could also incorporate rice and eggs for a filling breakfast casserole.
Baked french toast is a great breakfast casserole idea. It takes the old favorite of french toast and puts a whole new spin on it. The night before, simply layer toppings between slices of bread. I like to layer bread, bananas, with dollops of all natural peanut butter. Then, combine four eggs with a cup of flavored creamer (I like Silk Soy Creamer in vanilla or hazelnut), mix well, and pour over the whole thing, saturating the bread in the casserole dish. This, like all the easy breakfast casserole ideas, can be prepared the night before. Then, in the morning, bake at 375 for about 30 minutes.
You can really play around with these breakfast casserole ideas. So long as you are using the basic formula for each dish, the possibilities are virtually endless. They are simple casseroles to make, yet make a big impression on your family, as well as on their stomachs!
They say breakfast is the most important meal of the day. Give yourself the breakfast you deserve with these breakfast casseroles!
