Easy Breakfast Fruit Salad

Avoid Fast Food and Eat This Fruit Salad

I came up with this fruit salad after seeing my sister make something similar for my dad to eat for breakfast. It just sort of clicked for me that eating breakfast can be tasty and nutritious -- and it can be fast. Make it ahead of time and keep it in the refrigerator for a quick breakfast. You can also spoon it onto yogurt and add granola for extra nutrition.

Summer Breakfast Fruit Salad

2 cups diced melon (cantaloupe, honeydew, crenshaw)
1 cup seasonal berries (such as blueberries, blackberries, raspberries or huckleberries)
1 cup strawberries (hulled and stems removed)
1 cup mandarin oranges in segments (or sliced oranges)
1 cup sliced peaches (use fresh)

Mix all ingredients and store in the refrigerator in a sealed container. Makes about 6 cups. Eat plain or serve on cereal, with granola or with yogurt.

Winter Fruit Salad

2 cups apples, cored and diced
1 cup strawberries (hulled and stems removed)
1 cup diced pears
1 cup clementine tangerines in segments (or mandarin oranges)
1/2 cup raisins
1/2 cup dried cranberries
1 tsp cinnamon

Mix all ingredients and store in the refrigerator in a sealed container. Makes about 6 cups. Eat plain or serve on hot oatmeal, with granola or with yogurt.
