2 large ripe tomatoes
1 clove garlic
Salt and pepper to taste
Olive oil (1/4 - cup)
Fresh basil ( 3-4 leaves)
Chop the tomatoes into 1/2" peices
Mince , then completely smash the garlic clove
( Use a little salt and the flat part of your knife's tip to grind garlic into a paste)
Mince the Basil
Mix all the ingredients together and serve on the crostini.
You can make the crostini yourself too, just slice Italian bread in 1/2" slices,
spread those out on a cookie sheet, drizzle with olive oil, ( just a little )
salt and pepper. Bake then at 350 for maybe 10 mins, until they are lightly
browned. You can also slice the bread in 1/4" slices and bake as above.
The thinner version will be crisp like croutons.
