Easy Buckeyes: Christmas Cookie Recipes

You will need

a wooden skewer or toothpicks

a tray of milk chocolate squares with the wax for candy making. ( it is sold in the baking goods isle)

1lb of margarine

2tsp vanilla

2lbs of peanut butter

21/2 lbs of powdered sugar

melt butter in bowl

mix with hands peanut butter, powdered sugar and vanilla

roll into tablespoon size balls or smaller

lay on wax paper on a cookie sheet close together , refrigerate for a few hours until cold throughout

get a pan of water put 2-3 cups of water in the pot bring to a slow boil

in another pan smaller than the first add the chocolate squares

put that pan inside the pan (so you will have a double boiler) with the boiling water

melt chocolate- be sure not to get any water in the melting chocolate

when chocolate is melted, turn down heat to low, take a wooden skewer or tooth pick and stick it into the peanut butter ball and dip into chocolate

set chocolate side down on wax paper.

This recipe will make 100 buckeyes depending on how big you make them.

I store my buckeyes in a Christmas box and stick them in a freezer up to a week

and bring them out as I need them for parties or I make up little tins and give them to friends and family.
