Chocolate, Pineapple and Peanut Butter Cake Recipes

It's just not a gathering of family and friends without dessert! Over the years my love of chocolate, cake and fruit has evolved into creating my own versions of delicious desserts. They are all easy to make, delicious and are sure to be hit whenever you serve them. Enjoy!

Black Forest Cake

Dark Chocolate Cake Mix
Milk Chocolate Frosting
Polaner All Fruit Seedless Raspberry Fruit Spread (small jar)
Handful of fresh raspberries
Bundt Pan

Mix and bake cake according to package directions

Allow to cool at least 2 hours

Invert cake on a large piece of wax paper

Cut cake through the center so you have a top half and a bottom half

Carefully move the bottom half to a serving dish or cake plate

Spread bottom half with the Polaner Fruit Spread

Carefully put the top half of the cake on

Frost with Milk Chocolate Frosting

Refrigerate for at least an hour so the Frosting sets

Garnish with fresh raspberries on top before serving

Pineapple Upside Down Cake and Cupcakes

1 cake mix will make the cake and cupcakes

Duncan Hines Pineapple Supreme Cake Mix or Yellow Cake Mix
¼ cup granulated brown sugar
½ cup butter
Canned Pineapple Rings
Maraschino Cherries

For Pineapple Upside Down Cake:

Melt the butter in a 10" glass pie dish in the microwave

Arrange pineapple rings around edge of pie dish (on top of butter) and one in the middle

Place a maraschino cherry in each pineapple ring

Sprinkle the granulated brown sugar on top

Prepare cake mix according to directions

Pour half the batter on top of the ingredients above

Bake for 50 - 60 minutes at 375 degrees

Check for doneness

Allow to cool for 10 minutes and invert on serving dish

For Pineapple Upside Down Cupcakes:

Spray butter cooking spray in bottom of cupcake tin
Place a quarter of a pineapple ring in each cupcake holder
Place a half of a maraschino cherry in each cupcake holder
Sprinkle with ½ tsp of granulated brown sugar
Add batter on top
Bake for 20 - 30 minutes at 375 degrees
Check for doneness
Allow to cool for 10 minutes and carefully invert on serving dish

Peanut Butter Cup Layer Cake

Yellow Cake Mix (or chocolate)
½ cup smooth peanut butter
Milk Chocolate Frosting
Bag of small size peanut butter cups

Mix and bake cake according to package directions

Pour into (2) round cake pans

Allow to cool

Spread peanut butter on top of one cake

Place other cake on top

Frost with Milk Chocolate Frosting

Cut the peanut butter cups in half and decorate the entire top of the cake with them cut side down
