Easy Chicken Dorito Casserole

Simple Chicken Dish

As the holidays draw near I know a lot of people will be looking for dishes to take to get together's and parties. Here is one chicken dish that I make around the holidays as well as through the year and there are never any leftovers.

Chicken Dorito Casserole

Ingredients Needed:

1 lb.- Cooked cubed chicken breast
2 cans-
Cream Of Chicken Soup
2 cans- Cream of Mushroom Soup
1 can- Cream of Celery Coup
1 can- Rotel Tomatoes
5- green onions
1/2 - Bell Pepper
1 bag- Nacho Doritos crushed
2 cups- Shredded Mexican Blend Cheese
2 cups- Shredded Sharp Cheddar

2 TBSP- Butter

Directions:

Preheat oven to 375 degrees.

Cut up the green onions and bell pepper and saute them in a frying pan with the butter. Mix together all the soups as well as the Rotel tomatoes in a large mixing bowl. Add the green onions and bell peppers and stir until blended well.

Crush the Doritos while still in the bag until there are no whole pieces. Spray a 13x9 baking dish with non stick cooking spray. Line the bottom of the dish with half of the crushed Doritos. Next, place half of the soup mixture on top of the layer of Doritos. Place half of the cooked cubed chicken on top of the soup mixture. Follow that with 1 cup of each of the shredded cheeses.

Repeat the step above ending with the last of the cheese on top. There should be two layers of mixture. Cover with foil and place in the oven for 30-45 minutes. After 45 minutes remove foil and cook another 10 minutes until cheese is nicely cooked on top.

This has been a favorite around my home for years now. I hope that it becomes a favorite in your home or around the holidays as well. Just an FYI, the baking dish will be FULL when you get everything in so be careful when placing it into the oven. Happy Cooking!!

    I don't eat chicken, but could probably substitute tofu cubes. Sounds yummy!
