Ingredients

Serves 4
8 oz semi-sweet chocolate
1/4 cup dark rum
5 large eggs - separated
1 tsp vanilla extract
3 tbsp sugar

Directions for Easy Chocolate Rum Mousse

Melt Chocolate In A Double Boiler and Add Rum
Cut a bar of semi-sweet chocolate into small pieces and melt in the top bowl of a double boiler. Add rum and stir. Set aside chocolate until cool

Separate Eggs Into Separate Bowls and Beat Yolks and Vanilla
Separate yolks and eggs into two bowls. Beat egg yolks and vanilla.

Add Yolks to Chocolate
When chocolate is cool, add the egg yolks gradually and stir. Be careful... do not add yolks if the chocolate is still too warm or you will get scrambled chocolate eggs.

Beat Egg Whites and Sugar
Beat egg whites until stiff, slowly add sugar and beat until peaks hold.

Fold Egg Whites Into Chocolate
Fold egg whites gently into chocolate.

Garnish and Serve
Garnish with a dollop of whipped cream, and a mint leaf and serve.
